Call Me Weird, But I Love Chopping Veggies
Vegetables bring joy to life prompt response: Onions, tomatoes, zucchinis, potatoes, tomatoes — so many veggies, so little time

Onions can make you cry when you cut them, but I love them. I chop them up so much though, they do not make me cry anymore.
Onion, including green onions, is one of my favorite veggies — they add so much flavor to a hamburger, pasta or rice dish — and I love them lightly sautéed in butter. Yum!

My second favorite veggie has to be the potato. I grew up on a potato farm, so there is much nostalgia there. They are also one of the most versatile veggies you can have on hand, and they tend to be inexpensive, at least in most parts of the world.
Sautéing up potatoes and onions together is just too yum!

Other veggies I love: zucchini, cabbage, garlic, carrots, bodi, and almost any kind of pepper, both sweet and hot… and even though mushrooms aren’t technically veggies, I love those, too.
My husband’s favorite veggie is the tomato, so we always have plenty of those on hand and cook with them frequently as well.
Why do I love cutting up veggie so much? I guess it’s the anticipation perhaps. The preparation, the action… preparing food to me… means pure love.
Shopping for veggies here in Trinidad & Tobago at the open markets can be a lot of fun, too… at least for me. My husband tends to hate it. He’s not much for crowds.


Sometimes we find cool new things to try though, like eddoes and eddoes choka.
Trying out new veggies and recipes is just the spice of life!
