My husband didn’t really like the way I prepared zucchini the last time I made it. So, when it came time to prepare zucchini again for dinner, in this instance he politely tapped me on the shoulder and asked me to watch a video he’d found on YouTube.

I swallowed my pride a bit… and watched the video. Had to admit, the recipe looked scrumptious. I was salivating already.

And best of all, hubby said, we have all the ingredients.

How often does that happen? You see a delicious looking recipe and the kitchen is already stocked with everything you need! Wow!

Just the day prior we had gone to the big farmer’s market in Tunapuna here in Trinidad & Tobago. We had picked up not only the zucchini, but a fresh coconut, bananas, a type of green bean they call bodi, tomatoes, cucumbers, shado beni (culantro), cinnamon sticks and some pears, which were of course imported. These were from the US. Hey, gotta have a little taste of home sometimes.

As mentioned, the recipe called for fresh dill and garlic. Just a couple of days prior I saw some fresh dill in the supermarket. It’s not something we usually purchase but I told hubby I wanted to try it out. He kinda scowled disapproval, as he likes to do sometimes, so I had to dig in my heels a bit and managed to win out.

Trust me… he was happy for me to have won out (might not admit that though.)

Fresh garlic. Check. We always have fresh garlic in the house. We use it frequently… to ward off vampires… ha ha, no not really. It’s very healthy!

So, we were set. I cut up those zucchinis quick!

As per the recipe instructions, after cutting up the zucchini I tossed them about with some salt, flour and paprika… we always have paprika around, too. Love it. I threw this into a skillet with some oil and sautĆ©ed them up beautifully.

After frying, the recipe instructed to add pressed garlic. I don’t have a garlic press yet (need to get one) so I finely diced it up the old-fashioned way with a sharp knife and a cutting board. I also finely chopped the dill.

The only way I deviated from the recipe at all is that I decided to add the garlic, dill and soy sauce to the skillet and lightly stir-fry this with the zucchini for just a minute or two.

I love the taste of lightly fried garlic! One does have to be extremely careful though not to overcook the garlic as the flavor will quickly transform into something real yucky!

And here is the finished product. Let me tell you, it was delicious!

Have to give hubby a lot of credit. Would have never tried this without his nudge.
