Simple Hearty Vegetable Soup

In the middle of the winter, it always feels nice to have a nice warm cup of soup. Growing up I remember having a lot of soups. I remember both my mother and grandmother making wonderful soups. Most of the time the meal would start with the soup. One of my all time favorite soups is cauliflower soup. When my mom used to ask me what kind of soup, she wants me to make I always ask for the cauliflower soup.

Making soup I don’t always do measurements. It is whatever looks it feels good and the right amount. This can be hard sometimes when thinking about recipes. In this soup, I used carrots (1), French onion(2), cauliflower (handful), fresh parsley (small handful), fresh young beet greens (small handful), sliced garlic (1–2cloves), celery (1 ), bean noodles (half ), and spices including salt, pepper, turmeric, red pepper flakes, and Hungarian paprika. A variation of the soup is adding fresh tomatoes in the end.

I start with the water and add all my vegetables and spices except the parsley and beet leaf. I added those in the end just as I’m turning off the heat to keep the most vitamins in the herbs. Parsley has vitamins A, C, K, Potassium and Folate. I added the bean noodles when the vegetables are half cooked just in about 5 minutes.

The soup cooks fast it is done in about 15 minutes. I loved the addition of fresh heirloom yellow tomatoes.
