Healthy and Delicious Refried Black Beans

Ingredients

  • 2 cups dry black beans
  • 8 cups water
  • 1 quartered onion
  • 1 tsp each paprika, garlic, and onion powder
  • 1/2 tsp cumin
  • 1/8 tsp smoked paprika and cayenne
  • 2 tsp salt or to taste

Directions

  1. Remove stones from beans and rinse in strainer.
  2. Place water, beans, and onion in stockpot. Partially cover and bring to boil. Reduce heat and simmer until tender — roughly 90 to 120 minutes. Add water if needed.
  3. Test for doneness by pinching a bean. It should yield to a soft squeeze.
  4. Once done, drain most of the liquid, keeping beans in pan. Discard onion.
  5. Add seasonings.
  6. On medium heat, blend with immersion blender to desired consistency.
  7. Simmer, partially covered for 10–15 minutes, stirring occasionally. Turn off heat and stir.
  8. Serve.

Topping options: diced cabbage, drizzle of olive oil, and pico de gallo.
