Healthy and Delicious Refried Black Beans
Perfect for taco night
Ingredients
- 2 cups dry black beans
- 8 cups water
- 1 quartered onion
- 1 tsp each paprika, garlic, and onion powder
- 1/2 tsp cumin
- 1/8 tsp smoked paprika and cayenne
- 2 tsp salt or to taste
Directions
- Remove stones from beans and rinse in strainer.
- Place water, beans, and onion in stockpot. Partially cover and bring to boil. Reduce heat and simmer until tender — roughly 90 to 120 minutes. Add water if needed.
- Test for doneness by pinching a bean. It should yield to a soft squeeze.
- Once done, drain most of the liquid, keeping beans in pan. Discard onion.
- Add seasonings.
- On medium heat, blend with immersion blender to desired consistency.
- Simmer, partially covered for 10–15 minutes, stirring occasionally. Turn off heat and stir.
- Serve.
Topping options: diced cabbage, drizzle of olive oil, and pico de gallo.
