The Eye of the Beholder
Mmm Mondays Prompt & News #6
At first glance, you’d say she isn’t particularly pretty. She seems perfectly plain. You’d likely pass her by without a second thought, almost as if she was an apparition or figment of your imagination.
But if you stop and pause, take a moment and simply watch, she becomes extraordinary.
Wait long enough and you’ll witness her smile. Slightly crooked, too big, and full of teeth. It lights up the room, drowning out the sun, making you wonder how such a wondrous thing could have ever been contained.
You’d catch the sparkle in her eye. Mischievous, yet knowing. Calculating and yet, she appears excited. Filled with joy. That small glimmer unveiling an exuberant inner child.
You’d make out the freckles that litter her nose, fading softly into her heart-shape hairline. The reddish tinge to her auburn locks. The dainty shell of her inner ear.
You’d notice her limbs are long and lean. Her waist small and tight. And you’ll wonder how you did not see it.
Where you had originally thought her plain, comely. You’ll come to comprehend that if you allow it to happen, you’ll find beauty where at first you saw nothing.
The Eye of the Beholder:
The subjective appreciation or evaluation made by an individual viewer, participant, appraiser, etc.
Everything in life is subjective. Whether it’s a knick-knack you love, but everyone loves to hate, or a terribly outdated piece of clothing you just can’t get rid of. Perhaps, you call something art, but others call it garbage, or love a song that reminds others of nails on a chalkboard. Whatever it is, we want to know…
What makes you say Mmm?

Ugly, but Delicious

Best Ever Guacamole
If ever there was a food that looked like something you SHOULD NOT ingest, guacamole wins the prize! But thankfully, this authentic Mexican recipe is so delicious, you’ll come back for more.
Ingredients
- 3 avocados, ripe (I use Hass, because they are huge!)
- 1/2 small red onion, finely diced
- 2 Roma tomatoes, diced
- 3 tablespoons finely chopped fresh cilantro
- 1 jalapeno pepper, seeds removed and finely diced
- 2 garlic cloves, minced
- 1 lime, juiced
- 1/2 teaspoon sea salt
Directions
- Slice the avocados in half, remove the pit, and scoop into a mixing bowl.
- Mash the avocado with a fork and make it as chunky or smooth as you’d like
- Add the remaining ingredients and stir together. Give it a taste test and add a pinch more salt or lime juice if needed
- Serve the guacamole with tortilla chips
