Rich and Creamy, the Mighty Chicken Stew

Are you thinking of preparing a quick dinner tonight? Then the mighty chicken stew is your answer.
Rich and creamy, yet quick to make. A perfect not so heavy meal especially, during cold weather. Enjoy them as it is or with bread or buns.
Ingredients for 1 big Bowl of stew
Preparation Time: 10 minutes & Cooking Time: 20 Minutes
1/2 cup diced potato
1/2 cup diced carrot
1/4 cup chopped chicken breast (I prefer boneless)
1/4 cup chopped onion
1 teaspoon crushed ginger
1 cup coconut milk or full-fat milk
1 tablespoon cooking oil
1 teaspoon salt (adjust to your taste)
Optional
2 green chili ( if you like to spice up)
Preparation
- Cook diced potato, diced carrot, chopped chicken, chopped onion together with salt in a pressure cooker (if you have at home), or in a normal pot with enough water. 1 pressure is enough if you are cooking in a pressure cooker and let is rest and settle the air.
- Open the pressure cooker or pot, stir in green chilies and ginger.
- Let the stew boil in low-medium heat.
- Add coconut milk or full-fat milk when the stew starts thickening. Adjust the consistency to your liking by adding little water if the stew is too thick.
- Add oil to the stew.
- Remove the cooker or pot from the stove and let it rest for 5 minutes before serving.
Notes
- You may use cooking cream instead of coconut milk for a different taste.
- Coconut oil is a good substitute instead of cooking oil.
- You may garnish the stew with Basil leaves, lime zest, or lime leaves.
