Rice Is The Wife, And Rice Noodle Soup Is The Concubine
What is behind PHO 🍜?
The story of Crossing the Bridge (過橋米線) noodles by Linda Ng evoked my desire for another similar food — PHO.
Phở or pho is considered Vietnam’s national dish that consists of broth, rice noodles, herbs, and meat (usually beef, sometimes chicken ).
Pho is a popular food in Vietnam where it is served in households, street stalls, and restaurants countrywide.
Vancouver, where I live, brings together food from all over the world. Among them, there are not only authentic Chinese dishes but also delicacies from Korea, Japan, and Southeast Asia.
Pho is a very popular Vietnamese dish that can be found everywhere in Vancouver.
Over the weekend, we went to a nearby Vietnamese noodle restaurant for dinner. I ordered the shop’s signature rice noodle dish.
The waitress brought at first a side dish with bean sprouts, mint, and a small slice of lemon.

After a while, another bowl of steaming rice noodles was served, topped with thin slices of beef and meatballs (cut in half).

At this time, I blanched the bean sprouts and mint leaves while the soup was still hot, added a few drops of lemon to the soup, and it was ready to eat.
Wait! If I were a Vietnamese man, I couldn’t eat rice noodles at dinner.
Why is this?
In a travel guide, I read an interesting interpretation of this Vietnamese proverb below.
Rice is the wife, and rice noodle soup is the concubine.
In Vietnam, where and when to eat rice or rice noodles is very particular.
You can eat rice noodle soup at home or outside. You can sit on a small stool to eat, casual and comfortable.
But when eating rice, you should sit at the table with your family, and the seats at the table are also sorted by age. You have to follow table rules like sitting up straight and not making noise when eating soup.
In Oriental countries, rice is the staple food, which can meet the basic needs of the human body, while rice noodle is complementary food, just to satisfy people’s appetite.
From this perspective, for men, rice is like a wife, and rice noodle soup is like a concubine.
Rice is the necessity of a fair and honest life, and rice noodle soup is the bright color of life. It ignites your desire, and attracts you deeply, but you have to be careful. 😝
Therefore in Vietnam, men cannot eat rice noodles for dinner, but only in the morning or noon.
As a woman, I can eat rice noodles whenever I want! Or, maybe not?😉
