Recycle your roast leftovers into a curry!

A few days ago, I made some wine-roasted chicken, with a side of spiced carrots like this:
I ended up with leftovers, both chicken and carrot. So, I used them in a simple curry.
Extra ingredients you’ll need:
- One small onion
- One tbsp flour
- Two tbsp curry paste of your choice
- Handful of raisins
- 3 tbsp Greek yogurt
- Sprinkle of spices: cardamom, turmeric, garam massala, cumin.
- A bit of oil
Chop the onion, leftover veg and meat. Saute, sprinkling the flour to coat them. Add raisins, curry paste, spices and, after 5 minutes, the yogurt. Reduce heat and let simmer gently for a few more minutes- not too much or it will ruin the yogurt texture! Serve with steamed rice.
