Yes, you read that right; banana omelette. (I was inspired to create this by my sister’s love of banana sandwiches as a child.) Something to use that leftover banana with.

Ingredients

1 banana

Herbs such as mint, sage, and thyme

2 eggs

Feta cheese

Method

Whisk eggs

Drop in cheese

Pour into a frying pan lined with olive oil.

Drop in herbs and spices

Add sliced banana

Turn over till lightly browned

Serving suggestion

As you like it

With thick double cream for a treat.
