Mulled wine braised red cabbage is a winter favourite.

This one is a great side for a roast, or for Christmas dinner.
You will need:
- 3 cups red cabbage, shredded.
- 1 cooking apple, shredded or chopped.
- 1.5 cups red wine.
- The same spices you would use for mulled wine: cinnamon, cloves, nutmeg, allspice, a touch of ginger. I also like to use a bit of garam masala.
- A dash of soy sauce.
- A bit of cooking oil.
Lightly stir-fry the cabbage and apple for about 2–3 minutes, then add the wine mixed with spices and soy sauce, and braise it for a further 5 minutes, until reduced.
