I’m A Spiralizer Fan

Twirl and crank out pretty zoodles.

When I first savoured zucchini spaghetti at a farm-to-table hot spot, this dish won me over. Impressed, I bought a Paderno Tri-Blade Tabletop Spiralizer for food art fun in the kitchen.

My test kitchen cornucopia overflowed with fruit and vegetable spiral ribbons, cuts and curls. Piled high plates and Tupperware bowls fought for space on the kitchen countertop and table.

A spiralizer saves prepping time — took me f-o-r-e-v-e-r to slice by hand. Twirling motivates family members to join in the fun. My son cranked out pretty ribbon cucumber curls for salads. Following my zucchini success, I cranked out sweet potato spaghetti and parsnip noodles next.

Did I get carried away? Heard no complaints — the taste panel passing through my kitchen mess vetted, analyzed and rated each recipe a success!

What about peppers, you ask? While Peter Piper picked a peck of pickled peppers, we have yet to pick peppers for our next taste test. :)

Is zucchini a fruit or vegetable? Zucchini is a fruit! Eat the skin, seeds and pretty flower blossoms — yes, edible. :) Safe to eat raw. And, it is good for you.

Recipe: Zucchini Noodles with Lemon Dressing

This zucchini recipe is made from scratch, a healthy meal substitute for noodles or pasta.

Ingredients

3 small zucchini 2 cloves of garlic, finely chopped fresh cilantro or parsley, finely chopped lemon juice extra-virgin olive oil Dijon mustard honey sea salt

Prep

Time: 5–10 minutes

Wash zucchini. Cut zucchini ends for a flat surface. Insert into the spiralizer. Crank the handle and have fun :)

If you do not have a spiralizer, cut matchstick zucchini as you would julienne carrots — a simple French technique using a knife or peeler.

Cooking Directions

Time: 2–3 minutes

  • Heat skillet, frying or sauté pan on medium heat for 30 seconds.
  • Add 1 tablespoon of extra-virgin olive oil and finely chopped garlic.
  • Sauté over medium heat for 30 seconds.
  • Add zucchini noodles and sauté for 2 to 3 minutes.
  • Sprinkle chopped cilantro or parsley.
  • Turn off the heat source and let sit for a minute or two.

While you cook, try saying this quickly: how many cookies could a good cook cook if a good cook could cook cookies? A good cook could cook as many cookies as a good cook who could cook cookies.

Cooking and Uninvited Guests

Gasp!! What are those pesky little flies dancing on my tomato seedlings? 👀

I was tempted to suction them out with my handheld vacuum cleaner. Instead, I said goodbye to uninvited guests by adding eco-friendly sticky butterfly plant traps in the pots.

A fly and flea flew into a flue, said the fly to the flea ‘what shall we do?’ ‘let us fly’ said the flea said the fly ‘shall we flee’ so they flew through a flaw in the flue.

Be assured: no fruit fly or flea flew into the skillet while cooking in my kitchen.

Recipe: Lemon Dressing

Ingredients • 2 tablespoons of extra-virgin olive oil • 1 tablespoon of lemon juice • 1 tablespoon of honey • 1 tablespoon of Dijon mustard • 1/4 teaspoon of fine sea salt

Whisk ingredients and pour over zoodles. Add sea salt, toss and serve.
