There are plenty of quick and easy dinners and websites that will help you plan your meals for the month. Trying to spice up the evening dinner plate is a constant challenge for parents worldwide.

Luckily, we don’t have to suffer the boring Taco Tuesday any longer! With these quick and easy dinners, you will keep your Uber Eats driver happy, and your pocketbook empty all week.

Be prepared for the plate push. Enjoy the gag reflex. Things are about to get real.

Eggplant Balls

It is usually Meatball Monday at our house. The standard white pasta, bottled sauce, and meatballs made with things like meat were getting mucho predictable. I spiced it up a bit with this humdinger: eggplant meatballs containing no meat so, technically, they were eggplant balls.

Start with whole wheat pitas, top with Alfredo sauce, plenty of chopped kale, and cooked turkey breast. Adorn with brie cheese — be sure to keep the rinds attached — kids love those. Add some cranberry sauce for a hint of sweetness on the finish. Heat your garbage at 400 degrees and throw it out and open Uber Eats.
