My eldest daughter, Billie, is anaphylactic to nuts and eggs.

This gifts us a few challenges around her food, especially when she is invited to a party.

The crazy cupcake recipe is my go to.

I have made it countless times and know the recipe off by heart. The first couple of tries tasty soapy – I was too heavy handed on the bi-carb.

There are always a batch on hand in the freezer ready for her to “party” with. She is understanding more and more as she gets older, that she has to stick to her own “safe” food I pack.

Many mis-takes over the years have really hammered into her the importance of not sharing, not putting her hands in her mouth, not kissing anyone.

The not kissing part makes me wonder about long term affects, but it is how it is.

I have explained it to her best as I can.

Some people get offended, but after explaining the reasons, most understand.

Some don’t believe.

Either way, it is literally a matter of life and potential death for her.

OK…back to the nice sugary things in life…

The variations we use are vanilla, chocolate, rainbow and spiced.

I have replaced sugar from time to time with stewed dates. Usually these times only the icing is eaten! I figure a little treat is ok here and there. We generally eat whole foods to balance it out.

They ain’t all pretty, but here are the birthday cakes I have made her and her sister over the years. Their first birthday cakes are attempts at making their “comfort” toys Penny and Floppsy.
