Homemade Chili Powder Recipe
Ingredients:
For the basic chili powder:
- 2 tablespoons (16g) paprika or ground dried chiles (New Mexico chile powder is recommended)
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon ground dried oregano, preferably Mexican
Optional additions:
- 1/4 to 1 teaspoon cayenne pepper (for added heat)
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon allspice
- 1/4 teaspoon ground cloves
Instructions:
- Wear a mask if you have one to prevent sneezing due to the mixture of spices. Lay out a newspaper or an advertising circular for easy cleanup.
- Combine all the ingredients in a small bowl or large mortar and pestle. Work out any lumps in a mortar and pestle. If you don’t have one, whisk everything together in the bowl until combined and lump-free or sift using a fine mesh sieve if needed.
- Bottle and store the chili powder in an airtight container, label, and date it. Store it in a cool, dark place for best flavor and use it within a year.
Wine Pairing
A bold and spicy homemade chili calls for a wine with some sweetness and low tannins to complement the heat. I recommend a Zinfandel from Seghesio Family Vineyards. The robust fruitiness and subtle spiciness of this wine will harmonize perfectly with the flavors of the homemade chili powder.
