Vegetables, vegetables, vegetables. So many to choose from but just got used to this particular one.

Maybe it’s not the most popular vegetable, well not because of the correct reasons, but eggplants are perfection. It’s an acquired taste but believe me that it has lots of benefits which can help your health.

Eggplant is full of vitamins, fiber, minerals, and protein. It was even used in traditional medicine to treat diabetes and asthma.

Go ahead and try it! To eliminate some of the bitterness, I recommend soaking it in water for about five to ten minutes. Adding salt also helps. Then enjoy!

You can mix it up with your morning egg-toast, grill it and have it as a side dish while your having barbeque, salté it with other vegetables, and slap them on pasta. There are hundreds of recipes.

After reading this, hopefully, you’ll get encouraged to try it out.
