Vanilla CupCake
The Perfect Recipe

I have a compelling reason to say, My recipe is perfect.
Because I tried and tried, not just a few times but many times and the recipe never failed me.
I always get full loads of thumps up when I make this at home, especially from my daughter who loves to eat cupcake toppings only but not the cupcakes. I am extremely happy when she demands more and finishes the entire cupcake with a Thank you note.
So I am pretty confident that, the recipe I am sharing here will not fail you and gives you a fantastic result.
It’s an adaptation of a few recipes, I do tempt to research a lot when I want to make something and I have some specific avid cooking websites for reference purpose.
It’s Vanilla cupcake but as per my daughter’s request, I bake some of them with sugar toppings, remaining batter mix with chocolate chips to get the feeling.
Let’s get into the process of making.
INGREDIENTS
Vegetable Shortening or Unsalted Butter: 1/2 Cup
Sugar: 3/4 cup ( 1 Cup if you have sweet tooth)
Buttermilk: 1 Cup
All-purpose flour: 1 Cup — 2 Tablespoon ( or Cake flour: 1 Cup)
Corn flour: 2 Tablespoon (only if using All-purpose flour)
Baking Powder: 1/2 teaspoon (only if using All-purpose flour)
Vanilla Essence: 1 and 1/2 teaspoon
Salt: 1/2 teaspoon
Baking Soda: 1/2 teaspoon
Large Egg in room temperature: 1 ( 2 if small)
Vinegar: 3/4 teaspoon ( I used Apple Cider Vinegar)
oil: 1 and 1/2 Tablespoon

Oven: Bosch Conventional
Cupcake liners

PREPARATION
- Beat butter and sugar until fluffy in a bowl, set them aside.
- Sift All-purpose flour, cornflour, baking powder, or cake flour together with salt in a separate bowl, set them aside.
- Beat egg, buttermilk, vanilla essence, baking soda and vinegar in a separate bowl, set them aside
- Gently fold by adding dry mixture ( flour mixture) and egg mixture to the butter mixture. Gently beat them for a minute, do not overbeat as we need to maintain the airiness.
- Add oil to the mixture and fold the mixture
- Scoop batter in cupcake liners and bake them about 17–20 minutes in 190-degree Celsius ( Mine is Bosch oven and heating type I used is: Top/Bottom heating)
PS: Mix batter with chocolate chips if you would like to have a chocolaty flavor or bake them with sugar toppings.
