Logan’s Sunshine Sparkle Salmon Recipe

Comfort food that tastes like one of those free Mama hugs that you get at the Pride Parade while crying

Since y’all shocked me by reading my Green Bean Casserole Recipe en masse and leaving me nice compliments that stroked my ego, here is another Occident inspired fusion recipe.

Time to Cook: 30 minutes baking, 30 minutes prep time

Serves: 8 people who are not on HRT (Hormone Replacement Therapy) or 1.5 people who are on HRT*

*Note: If 1 or more people in your household are on HRT, you should consider making several side dishes to protect your relationship.

Ingredients:

Meat:

  • Use 3.115 pounds of fresh salmon or however much happens to be in your refrigerator at the moment. Note that it’s best if the “Fresh Never Frozen” sign is in all capital letters to let you know that the grocery store was so serious about the freshness of the fish that they’re orthographically yelling at you about it.

Sauce:

  • 2–3 cloves of freshly diced garlic
  • 14 ounces of Dijon mustard
  • 3–4 teaspoons of extra hot horseradish sauce
  • 1/4 cup of honey
  • 1 teaspoon of capers
  • 1 teaspoon of black pepper
  • 1 teaspoon of white pepper
  • 1 teaspoon of red pepper
  • 1 teaspoon of coriander seed
  • 1 teaspoon of basil
  • 1/4 teaspoon of lemon pepper
  • juice of 1 whole lemon
  • 1 tablespoon of olive oil

Marinade:

  • 1/2 cup of white balsamic vinegar
  • 1/2 cup of olive oil
  • juice of 1 whole lemon
  • 1 tablespoon of soy sauce

Garnish:

  • 1 cup of diced white onions
  • 6 diced green onions
  • 1 teaspoon of coriander seeds
  • 1 teaspoon of black pepper
  • 1 teaspoon of basil
  • 1 teaspoon of red pepper
  • 7 ounces of sheep’s cheese crumbled into bits

Step 1: Make the sunshine sauce.

  1. Dice the cloves of fresh garlic.
  2. Stir the garlic, Dijon mustard, horseradish sauce, honey, capers, black pepper, white pepper, red pepper, coriander seed, basil, lemon pepper, lemon juice, and olive oil into a medium sized bowl.

Step 2: Marinade and prep the salmon.

  1. Dice the green and white onions.
  2. Pour vinegar, olive oil, soy sauce, and the juice of half of the lemon into a glass or ceramic baking pan.
  3. Rub the salmon into the resulting marinade, making sure it is covered on all sides. Squeeze the remaining half of the lemon over the meat. Think about someone you care about that you’re missing right now. You will see the meat change to a slightly lighter color as you do this.
  4. Cover the salmon in the diced white and green onions.
  5. Pour the sauce over the salmon and diced onions.
  6. Add a light sprinkling of coriander seeds, black pepper, basil, and red pepper over the top to make it pretty.

Step 3: Bake the salmon.

  1. Cover the salmon in aluminum.
  2. Bake for 15 minutes at 400 degrees Fahrenheit while covered.
  3. Remove cover and bake for another 15 minutes at 400 degrees Fahrenheit while uncovered.

Step 4: Add the sparkles to the sunshine.

  1. Crumple up some cold sheep’s cheese and pour it over the hot salmon.
  2. Admire your culinary artwork for about 10 minutes.
  3. Put the salmon on a plate and sprinkle it with basil to give it that gourmet restaurant flair.
  4. Enjoy the salmon with someone who you love, even if that really special person is just you.
