This Healthy Salmon Burger is the Perfect Post-Election Comfort Food

We all could use some deliciousness to soothe our souls.

Can we agree that 2020 was one hell of a year filled with uncertainty, loss, suffering, and despair? So far, 2021 has started off kinda rocky with attempts to overturn election results and insurrection at the U.S. Capitol. Damn! Not sure how high my stress level can go.

When I’m stressed and emotionally weak, I want foods that will bring me immediate comfort — foods packed with flavor, disgustingly unhealthy like a plate of hot, french fries smothered in melted cheese [The last four years has been one long stressful moment!]. However, as much as I’d like to binge on comfort foods high in saturated fats, loaded with salt and sugar — I just can’t bring myself to ignore my 39 years of healthy eating. Instead, I opt for a healthy version of comfort food that’s packed with flavor and oh so satisfying — a salmon burger does the trick!

My family loves salmon burgers! I keep my pantry stocked with several cans of pink salmon. And, when we’re in the mood for good comfort food, we opt for a salmon burger, which is a great alternative for us since we don’t eat red meat.

This burger is inexpensive and very easy to make. You’ll need just a few ingredients.

For those of you that cook with a recipe (I’m not one of them), here’s how I make my burgers:

Ingredients:

  • 1 15-ounce can of pink salmon (makes 6 large burgers)
  • 2 eggs
  • 1/2 cup of instant mashed potatoes
  • 1 1/2 cups of Panko bread crumbs

Directions:

  1. In a medium bowl, mix 1 cup of instant mashed potatoes with a 1/2 cup of boiling water
  2. Remove the small bones from the salmon and place salmon in the bowl with mashed potatoes
  3. Add eggs to mashed potatoes and salmon, and mix thoroughly
  4. Add seafood seasoning, if desired
  5. Form salmon mixture into burgers
  6. Coat each burger with breadcrumbs (I love the Kikkoman Panko breadcrumbs)
  7. Heat oil (enough to cover the bottom of the pan) in a skillet
  8. Pan fry burgers (make sure oil is hot), on medium heat, until golden brown on both sides
  9. When done, place burgers on a paper towel to absorb any excess oil

Enjoy your burger any way you’d like! (We eat our burgers on potato or wheat rolls with lettuce, tomatoes, and cocktail sauce)

Yum!
