The hearty spud

A versatile delight

You can’t beat them roasted But that’s an awful lot of work And quite a long wait When all you need for culinary bliss Is to boil for twenty minutes And enjoy with salt and butter — Too bad I don’t eat dairy anymore.

So I roast them And fry them And add them to soup And stews Occasionally I will mash them But that calls for a floury variety That I rarely buy.

My mother makes potato cakes As my granny did before her And they are simply divine But no matter how I try Mine never taste right And I’ve given up trying — I’m looking forward to my next visit home.
