The Best Salmon Ever

I recently ate at the Blue Point Grill, in Cleveland. It’s won many awards. My father ate there with my brother and wanted to take me.
When I called for a reservation, they offered 5pm or 8:30pm. Every other time slot was taken.
My dad ordered the crab cakes. While they were good, they weren’t as good as the ones he had in Baltimore. That’s kind of Baltimore’s thing.
I had the simple salmon, grilled, plated in a lemon butter sauce, with sides of green beans and roasted potatoes. It was heavenly.
The light grilling slightly caramelized the flesh, without any taste of charring. The fish was completely cooked throughout, not the least bit squishy, but not at all dry. The chef removed it at the exact second of perfection.
