Many people think you are limited if you are vegan, but that couldn’t be farther from the truth.</p><p id="9a98">Because I am not eating animal products, I lower my intake of inflammatory foods, which makes it easy to stay at a stable weight.</p><h2 id="947f">My collagenous colitis is in remission</h2><p id="aa6f">My plant-based diet along with sobriety sent my colitis into remission and I haven’t seen her since! All of the times I was up in the middle of the night have vanished. It sure makes life a lot easier!</p><h2 id="d07a">My skin looks clear and even-toned</h2><p id="10b4">No more red-faced, blotchy skin. My skin is smooth, even, and soft now. Also, with sobriety, I seem to be aging in reverse or at least correct some of the damage I’ve done.</p><p id="cf09">I

Have you ever heard that steak takes a long time to digest? It takes at least two days, so after I would eat a meal with meat, I felt so sluggish. It felt stuck in my stomach, making my energy levels low.</p><p id="b5ad">I digest fruits, veggies, and vegan proteins (beans, tofu, etc.) easily because they are full of fiber. Some people think that going plant-based is the new, hip thing to do. If you live in a metropolitan area, I’m sure you see many vegan restaurants popping up all over town.

My husband, a carnivore, seems to think this is ridiculous, while I get excited every time I see a new plant-based restaurant to try.

For me, eating plant-based isn’t a fad or a trend. My curiosity started after watching the disturbing documentary, “Earthlings”. I barely made it through the movie, it was that disgusting. Animals are treated so terribly and the unsanitary practices of farms are something I will never forget.

I’ve also cut out animal products for health reasons, as it exacerbates my colitis and makes me feel terrible.

I was convinced that my cancer diagnosis in 2011 was caused by my meat and dairy consumption. Although now I think the culprit was alcohol, maybe it was a combination of the two.

Sure, you can google all the benefits and get your list from the scientists, but I love first-hand experiences. When I was diagnosed with cancer and colitis, I did extensive research.
