The Aubergine Snack

Fresh and pure from the garden

I went to my friend’s house on Diwali and she took me to show me her terrace garden.

In some flower pots, I saw aubergines hanging. She very courteously offered to give it to me.

She was excited. It is pure and organic. So good for health to eat pure clean vegetables and from the garden.

Before she would cut it I told her I first wanted a photo. She obliged me by clicking and sending me the picture too.

Since there were two big purple aubergines hanging she gave me one and kept one for herself.

I was very excited. See what I did?

I transformed it into a tasty, easy, enjoyable festive snack and served it too on Diwali.

Aubergines are made in many ways. I like to experiment with simple and tasty and since these days people are careful about their diet I use very little oil.

Cut the vegetable

I cut the Aubergine in circles and I got 8 pieces. Immediately I washed it. If you don’t do that it gets black and does not look good. Now the color will remain white inside.

Get the batter ready

I mixed three powders. Rice flour, gram flour, and corn flour as it stays crisp when the batters are mixed. I just added salt, red chilies or chili flakes, and some turmeric.

I put a nonstick pan with little oil and put it on a medium flame. You need to cover this and let it cook slowly. You get a super tasty dish.

When one side is done, turn it over and cook the other side again by covering it with a lid.

I served it and my friends wanted more. I told them it was a sampler only. However, I had one more aubergine lying with me and I made it as well and they loved it.

I served it with sauce. I also serve this with hot and sweet chili sauce.

Alternate — Aubergine Pakoras

The alternate method which is even more simpler but needs deep flying and more oil is what my friend Sandhya made.

She made fritters by dipping a batter made of gram flour and not mixed flour like me. This is also super tasty. They are called Aubergine fritters.

The pakoras are tasty. In fact, these were super delicious as she had put quite a few spices.

You can vary your spices to whatever suits you.

Aubergines grow easily. Just plant it in a flower pot if you do not have a ground-level home and it gives you multiple organic vegetables so good for your health to eat pure vegetables.

You can easily cut it from the garden and make it ready when your friends come.
