This Thai soup is one of the best soups I’ve had in my life. This recipe was an inspiration to me that turned out to be my soup of choice.
In addition to being healthy, it is perfect for those who are trying to be more healthy and be more careful with their diet.
Ingredients:
1 tablespoon Oil 1 tablespoon butter 1 clove minced garlic 2 chopped red onions 2 chopped red peppers (q.b) 1 tablespoon chopped lemon 2 cups chicken stock 4 cups pumpkin peeled and diced Cup and a half coconut milk 1 handful basil leaves
Preparation mode:
In a medium saucepan heat the oil and butter over low heat. Sauté garlic, red onion, red pepper, and lemon. Add chicken stock, coconut milk, and previously cooked pumpkin. Let the soup boil and the flavors be cleared. Grind everything and serve with some basil leaves.
