Tasty Creamy Basil Pesto Sauce

I have been hearing about pesto sauce sometime but haven't dared to make one, especially basil leaves.

Basil leaves are so popular worldwide; each cuisine has its way to include this incredible leaf.

This tiny leaf has many benefits, like good in tackling stress, anxiety, and inflammation, all are possibly controlled with a cup of tea made with the leaves.

I am not so into store-bought pestos for one reason, unknown chemical ingredients added to prolong its shelf-life, so I would like to make it on my own.

There are different pesto’s, and some are Pesto Calabrese — eggplant based, Pesto di Noce (Walnut Pesto), Pesto Rosso (Sun-Dried Tomato Pesto).

And I thought to start with the most basic and common pesto; basil leaves pesto.

But I had to wait and wait for some time for the availability of the leaves. Due to limited space in my flat, I couldn't grow a basil plant yet.

However, I am trying to grow some spinach using the hydroponics method. I will share the story some other time.

Back to basil pesto, So I waited some time to get this leaves, and finally got it, Singapore grown basil leaves grew on rooftops.

I made a variation here, In usual recipes, pine nuts are used, but here I am using pistachio.

Ingredients

200g fresh and clean basil leaves

2–3 garlic

1/4 cup grated parmesan cheese

1/3 cup pistachio

1/4 cup olive oil

1/4 cup cooking cream

salt to your taste

pepper powder to your taste

1 tablespoon butter

Preparation

  • Blend basil leaves together with garlic, pistachio, and cheese without adding water.
  • As the blending progress, slowly add olive oil to make it a smooth paste. This paste can be refrigerated for a few weeks.
  • Heat pan in low-medium heat, add little olive oil, and melt butter.
  • Add 1–2 tablespoon of basil paste, with pepper powder and salt.
  • Add cooking cream to dilute the paste the way you like it. You can make it more thick and creamy if you like by adding milk.
  • Add any cooked and drained pasta of your choice with a cup of cooked pasta water.
  • Enjoy your basil pesto pasta.
