Summer In a Glass
Inspiration is delicious!
My friend’s husband took her to brunch recently. The restaurant offers a variety of healthy beverages, and she loved her drink. She knew what was in it, but not how much, so I experimented. You can change the flavor profile as you prefer.
Watermelon — the base of the drink
Lime juice — makes it brighter
Mint — makes it cooler
Ingredients
- 1 small watermelon or 1/2 large watermelon
- 4 limes
- 4 mint leaves
Directions
Remove rind from watermelon and cut red portion only into large chunks. Working in batches, blend watermelon in a high-speed blender. Pour into serving pitcher.
Juice the limes. Add the lime juice to the serving pitcher.
Finely chop the mint leaves. (I liked a “hint” of mint taste. You may want more.) Add the chopped leaves to the serving pitcher.
Stir and pour into glasses.
