Starbucks Egg Bites — Copycat Recipe
DIY Starbucks — Cheap, Quick, Better!
I LOVE Starbucks Bacon and Gruyere Egg Bites. They are tasty, hot, low carb, filling, and delicious.
But, like everything else on the menu, they are overpriced.
Here in Kentucky, two tiny little egg bites cost $5.25 after tax. Which is ridiculous.
A whole carton of organic eggs costs around the same amount.
As good as they are, I do find it hard to justify buying them when I know they are so expensive due to branding and convenience, and when I know they are easy to make and you get more bang for the buck when you DIY.
Egg Bite Recipe
Ingredients:
- 6 large eggs
- 1 teaspoon Texas Pete (or your preferred hot sauce)
- 1 teaspoon salt
- a pinch of pepper
- 1 1/4 cup shredded Monterey jack or Gruyere cheese (or a combination) **I’ve also used cheddar
- 1 1/3 cup low-fat Good Culture cottage cheese (or your favorite brand)
- 4 Slices of bacon (I use turkey bacon)
Don’t want bacon? Customize this recipe by subbing the bacon with vegetables.
Diced roasted bell peppers and spinach are great options!
Directions:
- Preheat your oven to 300 degrees.
- Bring a pot of water to boil
- Carefully pour the boiling water into a 9x13 pan and place it inside of the oven. (I usually set the pan inside the oven, and pour the water into the pan while the pan is on the rack). This will create steam inside your oven which will help produce the creamy texture that makes Starbuck Egg Bites taste so good!
- Cook the bacon — cook till done, but not crispy or hard. Blot off grease if using pork bacon. Crumble.
- If you're making veggie egg bites, dice and saute your veggies and set them aside.
- In your Magic Bullet or blender, add all the remaining ingredients and blend until well combined.
- While eggs, cheese, and seasonings are blending, spray a 12-cavity muffin tray with pan spray.
- Add about 1/4 cup of egg mixture to each muffin tray cavity.
- Place the pan in the oven on the top shelf and cook for about 25 minutes.
- Once finished, use a mini spatula to pop out the egg bites.
These egg bites are great for meal prep as they could easily stretch a whole week, or at least half of the week, depending on how many egg bites you eat. I normally eat a couple for breakfast every day with a cup of black coffee, and sometimes I eat one for a snack.
