RECIPE — What On Earth Is This No-Bake M&M Cookies Recipe?

Man is the only animal that can remain on friendly terms with the victims he intends to eat until he eats them. — Samuel Butler

Good grief! Finally, a recipe worth critiquing, and it’s for no-bake M&M cookies. I suppose there’s a time and a place for these kinds of treats, especially if you’re in a rush or don’t want to bother with turning on the oven. Well, let’s get on with it then!

No-Bake M&M Cookies Recipe

Ingredients:

  • 3 1/2 cups (315g) old-fashioned oats
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup (113g) unsalted butter
  • 1 1/4 cups (250g) sugar
  • 1/2 cup whole or 2% milk
  • 1 cup (250g) creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 1 cup M&M’s

Instructions:

  1. Line a baking sheet with parchment paper and set it aside.
  2. In a small bowl, whisk together the oats and cocoa powder. Set aside.
  3. In a medium saucepan set over low heat, melt the butter. Whisk in the sugar and milk until combined and the sugar has dissolved, about 1 minute. Turn the heat up to medium and bring the mixture to a rolling boil. Boil for exactly 2 minutes without stirring.
  4. Remove the mixture from heat. Stir in the peanut butter and vanilla extract. Then, stir in the oats and cocoa powder mixture. Let sit for 2 minutes before stirring in half of the M&M’s.
  5. Use a cookie scoop to scoop balls of dough onto the lined baking sheet. Once all of the mixture has been scooped, use your fingers to gently flatten and round the mounds of dough. Press additional M&M’s on top of each cookie.
  6. Let the cookies sit at room temperature for 1 hour to firm up and set. For a firmer cookie, refrigerate the cookies for 45 minutes.
  7. Store the cookies in an airtight container or zip-top plastic bag at room temperature for up to 5 days or in the fridge for up to 2 weeks. These cookies can also be stored in the freezer for up to 3 months.

Wine Pairing:

Pair these playful no-bake M&M cookies with a glass of Brachetto d’Acqui from the producer Marenco. The light effervescence and sweet, fruity flavor complement the chocolate and peanut butter notes in the cookies.

There you go, a recipe for no-bake M&M cookies. It’s quick, easy, and suitable for those who can’t be bothered to turn on the oven. Don’t expect a Michelin star for this one!
