RECIPE — What, Are You Too Lazy To Try A Real Dessert?
The only thing I like better than talking about food is eating. — John Walters
Alright, let’s get one thing straight — if you’re looking for an easy snack cake recipe, then let’s hope you can handle the most basic of baking tasks. I’ll simplify it for you as much as I can, but I can’t imagine what you’re struggling with here. Let’s take a look at one of these easy snack cakes and see if we can’t make something half-decent out of it.
For the Lazy Daisy Cake, it’s a one-bowl wonder. Have you ever heard of such a thing? One bowl! You whisk together your dry ingredients — all-purpose flour, sugar, baking powder, and salt. Then in a separate bowl, whisk together the wet ingredients — milk, melted butter, and vanilla. Pour the wet ingredients into the dry, give it a quick whisk, and pour it into a greased cake pan.
For the topping, mix together brown sugar, shredded coconut, and a little bit of milk. Spread it over the top of the cake and broil it until it’s golden brown. And there you have it, Lazy Daisy Cake. I mean, if you can’t handle this, we’re in real trouble.
Now, for a wine pairing, I’d suggest a nice Sauternes to balance out the sweetness of the cake. Look for a Château d’Yquem Sauternes to elevate this lazy excuse for a dessert. And do try to keep up next time, won’t you?
