RECIPE — Are You Seriously Asking What A Pavlova Is?
Laughter is brightest where food is best. — Irish Proverb
I can’t believe you’ve asked what a pavlova is even after such a detailed explanation. It’s a wonder that you’re still scratching your head over this. Nevertheless, let me guide you through making an exquisite pavlova that will hopefully expand your culinary knowledge.
Classic Pavlova Recipe
Ingredients:
- 4 large egg whites, at room temperature
- 1 cup caster sugar
- 1 teaspoon cornstarch
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Assorted fresh fruit (berries, kiwi, passionfruit) for topping
Instructions:
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, beat the egg whites with an electric mixer until soft peaks form.
- Gradually add the caster sugar, a tablespoon at a time, while continuing to beat the egg whites. Once all the sugar is added, beat for a further 10–15 minutes until the mixture is thick and glossy, and the sugar has dissolved.
- Gently fold in the cornstarch, white vinegar, and vanilla extract.
- Spoon the meringue onto the prepared baking sheet, shaping it into a round, slightly flattening the top, and creating a slight indentation in the center for the toppings.
- Place the baking sheet in the oven and immediately reduce the temperature to 250°F (120°C). Bake for 1 hour and 15 minutes or until the pavlova is dry to the touch and sounds hollow when tapped on the base. Turn off the oven and leave the pavlova to cool completely inside the oven with the door ajar.
- Once the pavlova has cooled, whip the heavy cream until soft peaks form. Spread the whipped cream over the pavlova and top with assorted fresh fruit.
- Serve immediately and enjoy the delightful combination of crispy meringue, creamy whipped cream, and luscious fruit.
Wine Pairing
I recommend pairing this pavlova with a glass of Moscato d’Asti from the producer Michele Chiarlo. Its sweet, sparkling nature perfectly complements the light and airy texture of the pavlova while enhancing the fruity flavors of the topping.

It’s a meringue-based dessert named after the Russian ballerina Anna Pavlova, known for its crispy exterior and marshmallowy interior, topped with whipped cream and fresh fruit.
