Raisin/Oatmeal Cookies

Ingredients:
- 1 cup of unsalted butter, softened
- 1 cup of brown sugar
- 1/2 cup of granulated sugar
- 2 eggs
- 2 teaspoons of vanilla extract
- 1 and ½ cups of all-purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of ground cinnamon
- ½ teaspoon of salt
- 3 cups of old-fashioned rolled oats
- 1 cup of raisins
Instructions:
Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until well combined.
Step 3: Add in the eggs one at a time, mixing well after each addition. Then add in the vanilla extract and continue to mix.
Step 4: In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
Step 5: Slowly add the dry ingredients into the wet mixture and mix until everything is well incorporated.
Step 6: Fold in the oats and raisins with a spatula or wooden spoon.
Step 7: Using a cookie scoop or spoon, drop dough onto a lined baking sheet about 2 inches apart.
Step 8: Bake for 10–12 minutes, or until the edges are slightly golden brown.
Step 9: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
