Quarantine Cuisine: Five Affordable, Delicious, And Healthy Vegan Meals

These easy plant-based recipes take little from your time or money while providing great value and taste.

I’m not here to waste your time, you’re hungry, and regardless of when you read this, so am I.

If you didn’t get the memo explaining why you should be eating vegan right now, I wrote about it here, but if you know your stuff, move onto the recipes!

1. Lentil Dahl

In times of quarantine, I recommend keeping a bucket of dahl around which you can reheat, add to rice and greens, use as a dip or spread, or even eat cold if you’re lazy like me. You don’t even need a blender, oil, or coconut milk to simply boil lentils, and add what you already have.
