I am so happy my week one banana ice cream was a hit. Week two brings you an old favorite, Weight Watchers Muffins. It has 3 ingredients, high in fiber and sweet. At 150 calories, it is a bargain.

You will need

  1. A large muffin tin for baking. Cooking spray so they don’t stick
  2. A can of pureed pumpkin, is sold in the baking section of supermarkets. Small cans 15 ounces.
  3. 1 cup of water
  4. I box of cake mix, I favor chocolate buy what you like, any brand.
  5. Optional, small pieces of walnuts for the top.
  6. A large bowl for mixing

Method

Spray the muffin tin well. In a large bowl combine water, pumpkin, and cake mix. mix well. Pour the batter into the tins. OPT: you can add the walnuts for crunch on top.

Bake 350 degrees for about 40 minutes. Every oven is different. The top should be brown and crispy. More time might be needed. Let cool. I store them in a zip lock in the refrigerator. Enjoy, Tell me how you liked them. Grammy Judy
