An election, pandemic and racial inequality are the headlines dominating and dividing America right now.

We all could use some comfort and what better way to soothe our souls than with good old American apple pie?

Food unites people…if only for a brief moment in time. No matter what your political views, almost everyone can get behind a classic old-fashioned dessert.

To lighten the mood, I bring us together to bond over one singular topic. Here is my favorite apple pie recipe:

There are hundreds of apple pie recipes out there, but many are complicated, time-consuming and don’t turn out that great. This one is simple to make and always delivers a good outcome. It never comes out watery (which I have found happens with other recipes) and it doesn’t require me to make my own crust.

Although apple pie is the traditional American crowd-pleaser, in my circles there is another apple recipe that gleans almost the same amount of fanfare.

It is my apple cake. Yes, I said apple cake and no, it is not boring. On paper, it flies right under the radar. I get it…who would make an apple cake when they could make an apple pie, right?

Wrong. You need to make it.

A completely different animal, apple cake is under-rated and totally under-appreciated. Once you try it, you will understand what I mean.

One bite of this moist cake, over-flowing with tiny bits of apple, and you will see why my family loves it so much. Whenever I make it, my husband always asks me to make him a separate one and he eats it straight out of the pan!

It is the perfect autumn dessert and with Thanksgiving coming, you may want to consider adding it to the menu.

Apple Cake

Ingredients:

2 cups sugar

3/4 cup vegetable oil

2 eggs, room temperature

2 cups flour

1 1/2 teaspoons baking soda

1 teaspoon salt

2 teaspoons cinnamon

4 cups apples — peeled, cored and diced into small pieces. I use Gravenstein apples (if you can’t find those you can use golden or Jonathan)

1 cup walnuts (optional)

Instructions:

1. Set oven to 350 degrees

2. Cream together sugar and oil

3. Beat in eggs and vanilla

4. Sift together and add flour, baking soda, salt and cinnamon

5. Add apples (and nuts, if using)

6. Pour into ungreaed 8 1/2 x 13 1/2 Pyrex pan.

7. Bake 44–55 minutes in oven until knife inserted in center comes out clean

8. Serve a la mode with vanilla ice cream. YUM!!!

I implore all Americans to turn off the news, gather your ingredients and bake one of these treats. Maybe even bring your whole family together to help.

I know dessert won’t fix any of the world’s problems, but it can distract you from them, if just for a little while.

So, let’s all agree to take a “time-out.” Sit down, relax, put on a mindless Netflix show and savor every single bite of your creation.
