If you are a fan of the coconut flavor or aroma, you definately should try these simple, yet delicious homemade coconut cookies.
Not only are they super soft and a easy to whip up for last-minute guests, but they consist of nutritious and filling ingredients that will keep you satisfied and nourished.
I first came accross this recipe while experimenting with a oat cookie, I noticed I had an abundance of coconut flour sitting on the counter. What better way then whip up a batch of cookies. It was mid-winter, and the perfect time to make a snowflake themed cookie for the kids to enjoy. I pulled my BPA-free silicon snowflake cupcake mould and got to work.
To further emphasise the winter-theme, I pulled out my spice mix and sellected warming spices to infuse into the dough, starting with a sprinkle of cinnamon, nutmeg & cardamom.

Snowflake coconut biscuits
1 cup of regular flour ( I used organic plain flour) 1 cup of coconut flour Half cup of raw sugar Half cup of coconut oil (you can use butter or ghee instead) 2 eggs 1tsp baking powder
Start by mixing the bater and forming into small balls. Press each ball into the silicon snowflake mold & bake on 220 for 15min or light brown ❤️Enjoy with a warm cup of coffee or tea.
These biscuits also freeze well.
They can be kept in warm temperature for a week.
