My Thoughts on Shredded Coconut
Shredded coconut is perhaps the most controversial dessert ingredient, excluding pepper. You find it in cakes, ice cream, and buttery bars.
Despite its relative popularity in recipes worldwide, I would guess that coconut makes a good number of readers of this article grimace. Personally, I don’t like it — but I don’t hate it. That could be a cultural thing. I don’t prefer the flavor, but if coconut cake is offered to me, I’ll eat it. It’s cake, after all.
Note: it’s a different story with cilantro — I can’t stand cilantro. Apparently, that’s genetic.
My theory is it’s the texture warding people off — slightly chewy, slightly grainy. It’s not soft, smooth, or spongey like cakes, bars, or ice cream. That, or the fruit-ish and not so striking sweet coconut flavor.
