My Breakfast Omelet
A Great Way To Start Your Day

One of the best ways to start your day is with a GREAT Breakfast. A favorite of mine is an omelet. Not just your average one but one packed with lots of goodies. Lots of healthy nutrients that will make my day better.
To make a great breakfast, add some greens to your omelet; spinach is a great choice! Spinach is a nutrient-dense vegetable that is low in calories and high in vitamins and minerals1. Here’s a recipe for a bacon spinach omelet that you might enjoy:
Ingredients:
- Three eggs, whisked.
- 3 Tbsp half and half or your favorite coffee creamer.
- 1/2 cup spinach, chopped.
- 1/4 cup cherry tomatoes, sliced.
- 3 or 4 slices bacon, cut and cooked.
- 1/2 cup cheese, grated.
- Salt & pepper, to taste.
- Some salsa.
- I like to add some RYZE mushroom coffee, too.
Instructions:
- Microwave for 1 min
- Add diced onions and microwave for another minute.
- Remove bacon and onions from the microwave and add to a greased pan.
- Slice tomatoes in half or quarter. Chop spinach.
- In a bowl, beat eggs. Add half and half, salt and pepper to taste and beat again.
- Add the spinach, tomatoes, bacon, onions and cheese.
- Heat a greased pan. Once hot, pour the egg mixture. Cook on medium/high heat for about 1–2 minutes or until the bottom of the eggs are cooked.
- Flip it over for 1–2 minutes until the tops of the eggs finish cooking.
- Add some salsa, hot or mild to taste
- Fold over the omelet and serve hot.
If you don’t have a microwave, you can follow the same instructions in a saucepan.
This is a delicious and nutritious omelet.
You can add whatever other ingredients you desire. Coupled with a bowl of oatmeal and your favorite beverage, this omelet provides a well-rounded and satisfying breakfast.
