Mouthwateringly Delicious 3 Ingredient Vegan Mac & Cheese For Everyone, Even Kids

Sometimes life throws you a home run and this is one

A few weeks ago I ordered a big ol’ bag of nutritional yeast which I first came across around the tender age of 20 years old while working at one of the best vegetarian cafes in Seattle, WA.

They used nutritional yeast to make tofu scrambles and huevos rancheros vegan style.

Although I eat fish regularly now, I still don’t like to drink or use cow milk and I’ll never like the taste of eggs.

This is one of my favorite things about nutritional yeast:

Protein: Nutritional yeast provides all of the essential amino acids with 8 grams per 1.5 tablespoons.

Vitamins: Most nutritional yeast products are fortified with added B-vitamins. The nutritional data above is from a Wegmans brand, which provides 600% or more of most B-vitamins per 16 grams. It also has 1000% of the daily value for vitamin B12.

Nutritional yeast also has some calcium, thiamin, iron, and potassium.

It also tastes damn good!

You can add it to all sorts of things like popcorn, tofu, and pasta.

My partner has never tasted a cheese sauce made with nutritional yeast and the man loves his cheese…

However, he is curious and eager to try it because he cares about our health and knows that this is an awesome alternative to traditional mac and cheese.

I happened to have the good fortune of stumbling across the above video showing how to make this deliciousness with just 3 simple ingredients — that will be a first for me.

Served alongside some roasted veggie chicken filets and an organic salad comprised of arugula, mixed greens, beets, cherry tomatoes, and mozzarella, tonight’s main dish will not disappoint!

I’ll take photos of the vegan mac and cheese as made following the video’s recipe and post it as a short-form story that will include our reactions to the dish.

This is the kind of thing that makes me excited about cooking.

Also, the above photo reminded me to cut back my basil plant and place a few leaves from the trimmings (place them in a cup of water to use later) on the mac and cheese when I serve it.

Fresh basil has good nutrients in it as well.

I’m so grateful that having an hour of time snatched from me in the wee hours of the morning did not zap my zest to get creative in the kitchen and in life on this lazy, non-crazy sunny Sunday.
