Here’s a simple recipe for merdenele filled with cheese:
Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup sour cream
- 1 egg, beaten (for egg wash)
- 1 cup grated cheese (such as feta, Telemea, or another preferred cheese)
- Optional: chopped herbs like dill or parsley
Instructions:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Stir in the sour cream until a dough forms. You may need to use your hands to bring the dough together into a ball. If the dough is too dry, you can add a little more sour cream.
On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
Using a round cookie cutter or the rim of a glass, cut out circles of dough.
Place a spoonful of grated cheese onto the center of each dough circle. Optionally, sprinkle some chopped herbs over the cheese.
Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal.
Place the filled merdenele onto the prepared baking sheet. Brush the tops with beaten egg wash for a golden finish.
Bake in the preheated oven for about 20–25 minutes, or until the merdenele are golden brown and crispy.

Once baked, allow them to cool slightly before serving. Enjoy your homemade merdenele!
Feel free to adjust the filling according to your preferences, adding meats, vegetables, or other cheeses if desired. Enjoy your cooking!
