Master Soup Chef In The Making Here To Feed Your Appetite

Read at your own risk, especially if you’re hungry

Last week, I wrote about this spectacular, new soup/smoothie maker that my friend Rachel Jayne gave me for Christmas.

This week I decided to give potato leek soup a go!

I don’t use recipes which makes soup-making that much more adventurous for me.

I’m not exact with my measurements either, so I can only give you guess-stimates as to what I threw together to create this pot of deliciousness.

Here’s the list of ingredients that I used:

  • About a kilogram of organic potatoes (I don’t recall the variety)
  • 3 medium to large organic carrots
  • half of an organic leek
  • a wedge of organic celery root
  • a few inches of organic parsnip
  • 3 sprigs of fresh rosemary
  • 3 cloves of organic garlic
I don’t always, but decided to use a garlic press for this one AND included the pulp in the soup. Photo by KL Simmons
  • a tablespoon of organic vegetable broth
It says, “Force of Nature! Vegetable Broth- without yeast”. Photo by KL Simmons
Don’t ask me what “lovage leaves” are. I still need to look that up. Thank goodness for google translate! Photo by KL Simmons

I chopped up all of the big ingredients into cube-ish shapes, excitedly put them all into the soup-maker, added about 1 cup of water and pressed the start button.

After 25 minutes, once the soup-maker had heated and blended everything, I added a few more ingredients:

  • a few splashes of oat milk
  • about 2 tablespoons of low-sodium soy sauce
  • several dashes of hot sauce
  • a couple of sprinkles of organic cumin

I used a spoon to stir everything, let it continue to heat for another 10 minutes or so and voila!

This lovely addition to my cooking keeps the soup heated for an additional 40 minutes after it finishes its cycle.

When I tasted it, I knew that I’d struck gold!

Look at the bread that I plan to have it with shortly after I publish this story:

It’s the same loaf of bread that I love so much that I was inspired to write a whole story about it.

I don’t have any more avocado, but with soup that tastes this good, I won’t miss the avocado or gorgonzola that I had with it the other day.

In fact, it’ll pair wonderfully with the tofu that I’ve had marinating along with thinly sliced red onions in soy sauce, hot sauce and extra virgin olive oil for the past few hours.

Alan Asnen has a fantastic recipe for a tofu dish if you want to give it a try!

AND Lisa's Desk Chat has an easy recipe for homemade bread that I plan to try as soon as I have a dutch oven!
