Make Your Own Pistachio Milk

Forget oat, almond, and coconut milk…this is the GOAT plant milk.

Almond milk may be the reigning champ of plant-based milk, with oat milk popularity rising fast¹, but the greatest nut milk of all time is without a doubt made from pistachios. This is of course my subjective opinion, but make yourself a batch and tell me if you think I’m wrong in the comments. I think once you try it you’ll be convinced, especially if you love all things pistachio.

You’re going to need a blender, some cheesecloth or a nut milk bag, and a liter bottle preferably with a stopper. Fair warning though, this will ruin all other plant-based milk for you, it’s that delicious.

Homemade Pistachio Milk Recipe

Yields: 1 quart (just under 1 liter)

Total time: 6–8 hours then 5 minutes

Ingredients:

1 cup raw shelled pistachios

4 cups filtered water (plus water for soaking pistachios)

1 pitted date (optional for sweetness)

Instructions:

  1. Soak pistachios in water overnight (or for 6–8 hours), reserving 4 cups of filtered water for blending later.
  2. Drain and rinse pistachios, peel skins if you like (this will result in a more vibrant green color to your homemade pistachio milk).
  3. Place pistachios and 4 cups water into a blender (add the date also if using for sweetness) and blend on high speed until smooth, at least 90 seconds.
  4. Pour blended mixture through folded cheesecloth or your nut milk bag into a container, then transfer to jug or liter bottle and store in the fridge for up to three days. Shake bottle before using in your cereal, coffee, or other recipes. Enjoy!

If you’d like you can save the pistachio skins and pulp and add it to oatmeal, cereal, or better, make some banana bread with those bits.
