Make You Banana Pancakes, Pretend Like It’s The Weekend Now

The soundtrack for these delicious banana and ricotta pancakes!

If ever there were a soundtrack for this recipe, it would be Jack Johnson “Banana Pancakes”. I mean, really it’s all in the name of the song!

Every single time I cook these delicious pancakes, this song plays in my head (and usually on spotify too). Some of my happiest memories are of bopping along to this song whilst the kids help me whip up a batch of banana and ricotta pancakes.

And they are so simple to make!

All you need is a large mixing bowl, a fork, a wooden spoon, measuring cups, a frying pan and a spatula. This recipe makes about 10 pancakes, with 10minutes prep time and 20 minutes of cooking time (to cook the whole batch).

Ingredients:

  • 2 ripe bananas.
  • 1 egg.
  • 1/2 cup of ricotta.
  • Milk.
  • 1 1/2 cups of SR flour.
  • 1/2 tsp of baking soda.
  • Butter to cook with.

Method:
