Low Carb Chocolate Strawberries Recipe

You don’t have to break your low carb or keto diet to enjoy these delectable treats

Chocolate strawberries are the perfect special occasion food, taking center stage at our house for Valentine’s Day, New Year’s Eve, and birthdays. But there’s no need to wait for a special occasion to make this recipe. These chocolate covered strawberries are so simple even a child could make them. In fact, I have made them with my kids many times!

Look for large strawberries with stems or leaves long enough to hold onto so your fingers don’t get burned while dipping.

And this is important: Wash and dry your strawberries thoroughly before you even melt the chocolate. Wet strawberries are the reason for many chocolate covered strawberry failures.

Although this recipe calls for heating the chocolate in the microwave, it’s even better if you have a chocolate melter (available on Amazon for around $25) or fondue pot, because they will keep the chocolate warm as you’re dipping the strawberries. Otherwise, your chocolate may cool before you’re finished with all the strawberries.

You can go classic and just dip the strawberries in chocolate, but I like to jazz them up a bit. I rolled these chocolate strawberries in chopped peanuts, but any kind of chopped nuts would work well. You can also roll them in flaked coconut or mini chocolate chips. You can even top them with flaked sea salt for a sweet-salty flavor bomb!

Although this is a low-carb, keto recipe, you can make this recipe using regular chocolate chips as well.
