I Am a Parsley Freak

There, I just admitted it to the world

I am a parsley freak. I try to eat fresh parsley every single day. It is one of the most nutrient-dense foods we can eat. It is not only profoundly healthy for you but it also has a rich, fantastic flavor. It goes with so many different foods and it’s even wonderful all by itself. Sadly, parsley is so often relegated to the role of garnish. Yes, it’s pretty and very green but it’s real power lies in its mojo when eaten.

Yeah, yeah, yeah, parsley has far more vitamin C than citrus fruits but everybody knows that. And surely everyone knows that fresh parsley is super-rich in pro-vitamin A, calcium, chlorophyll, natural sodium, magnesium and iron. Not everyone may know, however, that parsley helps to hasten measles recovery, or helps to detoxify from meat or fish poisoning, or that it helps with kidney, bladder, or gall stones, or that parsley strengthens the adrenal glands, or that it benefits brain and optic nerves, or that it is used for ear infections, or that drinking parsley tea strengthens the teeth, or that using it on your skin increases circulation and adds color to your skin. Did you know any of that?

In addition to all those yummy healthy things inside parsley there is something else to be considered that many people don’t consider and that is color. We need to eat all the colors and there is absolutely nothing greener than parsley. Chew a few sprigs of parsley and you’re getting a good dose of the color green. Seen from a perspective of inner sight (with eyes closed) we are like a rainbow. Our auras are filled with color and this is something to be fed. A healthy aura has all the colors and any green deficiency can be easily remedied through a daily dosage of fresh parsley leaves.

Notice I said fresh! All the miracle nutrients in parsley start disappearing when the plant dries out. If you buy dried parsley leaves at the grocery store you are throwing your money away. It has to be fresh!

But that’s not difficult. You can buy fresh parsley year-round at the grocery store but you can also grow it year-round. All you need is a little garden or some pots and a sunny window. The nutrients and energy of parsley start fading away as soon as it is picked so if you’ve got a pot of parsley in the window you can pick it as you need it and you simply can’t get any fresher than that.

Well, actually you can. You can lower your mouth to the parsley plant in your pot and bite off leaves directly into your mouth like some kind of cow or something. For maximum benefit you can graze your parsley but I usually prefer eating like a human. I’ve tried the grazing method and, while there are some spiritual benefits to it, I prefer sitting at a table with knife and fork eating in a civilized manner a meal enhanced with fresh parsley mojo.

You can add fresh parsley to just about any dish. I never eat any kind of soup without parsley in it. The same goes for stews. And salads. Seriously, I cannot imagine eating a salad without fresh parsley in it. It is even great in scrambled eggs or mashed potatoes or on sandwiches or burritos. And it goes very well with almost any cheese. About the only thing I have ever discovered that parsley does not go well with is peanut butter. But who eats peanut butter anyway?

I once attended a business lunch with about a half dozen co-workers. All of our lunches arrived with a fresh sprig of parsley on our plates. I, of course, immediately commenced to eat the parsley.

One of my co-workers was watching me, “Hey, you’re not supposed to eat that. That’s just a garnish.”

“Are you kidding,” I replied harshly. “This sprig of parsley has more nutrition than everything else on the plate combined. Why on earth would I not eat it?”

I looked around the table. Everyone had stopped eating and they were all staring at me like I was some kind of freak. After everyone resumed eating I was ignored for the rest of the lunch and I was shunned at work for over a week.

For years I never talked about parsley again.

Okay, so maybe I am a freak. But so what! I have finally decided to come out of the parsley closet and admit to the world that I eat the stuff.

Once I went to the grocery store and they were all out of fresh parsley. I was like a heroin addict who couldn’t find a fix. It was terrible. That is when I started growing it myself. (Thank goodness it’s legal.)

Yes, I am a parsley freak and I no longer care who knows that. And what kind of parsley freak would I be if I didn’t proselytize that which I am so passionate about? Yes, I am happier and healthier because of parsley and I want everyone to know about it.

Try it. Your body will thank you.
