Hyderabadi Chicken Biryani — Evergreen Recipe

Simply awesome, and the best authentic biryani can also be made at home. This food is a very famous recipe in India. What makes it characteristically different from others is its aroma, taste, delicious meat, and the Zaffran.
All together everything gives it a different taste and mouth licking appearance.
Today's recipe is Hyderabadi chicken dum biryani, also known as " Kachi Yakhni Biryani" as the chicken is not cooked but placed for dum style cooking on low heat.
This is the world’s best one-pot meal which could give supreme joy and comfort to the family in festive seasons.
Ingredients
A. For Chicken Marination
11/ 2 kg chicken (cut into large pieces safely) 2 tbsp ginger and garlic paste Few bunches of coriander leaves 1 bunch of mint leaves ¾ tbsp turmeric powder Salt as per taste 8 green chilies 4 cloves 1 tbsp caraway seeds 2 cup golden brown fried onions 1 tbsp lemon juice 2 cup yogurt 4 black peppercorns 1 cinnamon stick 2 tbsp red chili powder 1 tbsp garam masala powder
B. For Rice
Water as required for boiling 1 kg basmati rice 3 cloves 1 cinnamon stick 3 cardamoms 1 tbsp caraway seeds Salt as per taste 1 tbsp lemon juice 3 black peppercorns
C. For Dum Seasoning
2 tbsp oil required Coriander leaves Mint leaves 1 cup fried onions 1 tbsp lemon juice 1 cup saffron flavored milk 1 cup of water
Instructions
For Chicken Marination
- Chicken pieces should be washed properly with lemon juice and water and properly strained. Ginger garlic paste should be added to it.
- After this, add red chili powder, turmeric powder, and salt into it and mix well.
- Add a bunch of coriander leaves, mint leaves, salt, and green chilies into a blender and make a thick paste out of it.
- Add this paste to the chicken and then marinade.
- Add whole garam masala into it and mix it properly.
- Crush onions and add into the marinade.
- Add beaten yogurt and oil into it and mix it well.
- Add garam masala powder and lemon juice and mix well.
- Add extra salt if required.
- Now rest the marinade in the refrigerator for about 45 minutes to 1 hour.
To Cook Rice
- Firstly basmati rice should be washed properly and soaked for about 35 minutes.
- Add water generously into a cooking pot.
- Now add caraway seeds, salt as per taste, cinnamon stick, cloves, and black peppercorns into water.
- Boil the water, and when it starts boiling, add soaked rice into it. Cook rice for about 6 - 7 minutes until it is a bit more than half cooked.
- Strain the rice properly and keep it aside
To Give The Dum
- In the cooking pot, add oil and spill it all over the base.
- Add chicken marinade into it and spread evenly.
- After that, add cooked basmati rice into it.
- Rice should be spread all over the marinade and seasoned with coriander leaves, mint leaves, and fried onions.
- Lemon juice should be added over the rice.
- Now add saffron flavored milk. Add ghee into it and a little water. Make a chapati dough and seal the lid and the cooking pot tightly.
- Now dum Biryani (cook Biryani over low flame) for about 45 minutes.
Take the Biryani out and serve this lip-smacking dish with raita.
