How I Fell In Love With A Whole Damn Pumpkin (And I Don’t Mean Pie)

Pumpkin Has Taken On Whole New Meanings

Until recently, the only times I’d ever eaten pumpkin throughout my life were in the form of pumpkin seeds and pumpkin pie.

The latter was always pumpkin puree from a can and the seeds were always from a box of seeds that were RIDICULOUSLY salted.

The only time I’d ever handled pumpkins were occasionally, when I carved one for Halloween, like in the above photo.

So last month, when my boyfriend returned from his parents with a Hokkaido pumpkin from their garden, I thought it was for purely decorative purposes.

I planned to carve it for Halloween.

He planned to cook it….with the skin still on it!?

I was taken aback and thought that it would NOT taste very good.

…boy was I wrong!

He roasted the pumpkin and white potatoes in:

olive oil, onions, garlic, cumin, salt and pepper

for about 20-25 minutes on 200 C, depending on your preference.

I simply:

  • Spread the seeds out in a single layer inside a non-stick pan that fits in my air fryer.
  • Drizzled them with olive oil and used my fingers to make sure all were covered.
  • I sprinkled some salt and cumin over them
  • I pre-heated the air fryer to 200 C
  • Set the timer for 6 minutes and left them in there for a few minutes afterward
  • I added a little raw honey on the side
