I was working on this issue and I did a few experiments with the code function in the Medium editor using the “`" key inside a code box.

Below is what my link looks like. It still will not allow you to purchase a membership from the app. That’s a setting on the Medium UX Designers will have to change. However, this “fix” will open a new browser window on a mobile device for the user to join through your membership link.
