Heat Wave Tomato, Feta and Avocado Salad

Its unbearably, ludicrously hot still, leaving us both hungry but too hot to eat. So my wife whipped up this brilliant salad that was satisfying, rehydrating and best of all required no heat and very little standing. Remember, in addition to fluids, in weather like this you need to replenish your salts as well (as always I am not a doctor and this is not medical advice), and this salad did that nicely.

Ingredients

2 avocados

1 punnet cherry tomatoes

125g feta

For the dressing

2 tablespoons rice vinegar

Juice of a whole lime

1/2 olive oil

1 slosh of rice vinegar

Salt to taste

Halve the tomatoes, cut the feta and avocado into bite size pieces and put in your salad bowl. Mix the ingredients for the dresssing, taste and then adjust to your preferences. Toss the salad with the dressing.
