Healthy, Diabetic-Friendly Oatmeal

If you’re diabetic, you have a harder time healing from infections. Something about the inflammation and swelling makes the infection harder to get rid of.

They took my blood sugar reading when I was at the ER. It wasn’t bad. But it wasn’t good. (I’d gone all in on the comfort food that day.)

The doctor wanted me to be very strict with my diet for the next week. Absolutely no sugar. Limited starches. Or I might not kick the infection.

Normally, I have oatmeal with butter and maple sugar for breakfast. What could I eat instead?

Here’s a diabetic-friendly way to prepare oatmeal:

  • Steel cut oats
  • Fresh berries
  • A little healthy oil (like Earth Balance vegan butter substitute)
  • Cinnamon
  • Almonds or walnuts for protein

It’s surprisingly good. I may even continue having my oatmeal that way.
