Hawaiian Papaya Salsa
Nothing beats a taco stuffed with all your favorite fresh garden goodies like tree-ripened avocado, radish sprouts, cilantro, vegetarian black bean burger, mayo, thinly sliced melted Tillamook sharp cheddar cheese, and a fresh papaya salsa.
The papaya salsa adds a kick, a lick, and a bit of sweetness that compliments all the other fresh flavors. It’s finger licking good!
Papaya Salsa Recipe
One very ripe Medium Papaya
One-two cloves of garlic
One medium lime
Small can of mild green chiles
Preparation
Scoop out the papaya including the juices and cut into small pieces.
Finely dice the garlic cloves and mix with papaya chunks.
Add two tbsp. of diced green chiles
Squeeze 1/2 lime
Mix all ingredients, sit for 10 minutes.
Assemble:
Crisp hot tortilla, bean burger, cheese, mayo, avocado, papaya salsa, sprouts and cilantro optional squeeze of lime.
