Grilled Cheese Open Sandwich

The most vivid memory of these mouth-watering crispy treats is from my early childhood. When I got back from my swimming lessons or outdoor play with friends. I could smell the aroma of sizzling grilled cheese coming from the kitchen.

Grilled Cheese Open Sandwich was a snack that looked appealing and was simply delicious. A cheesy chewy top and light crispy base. Made by loving hands of my mother, it tasted out of this world.

The 90's

The scent of those times was exceptional. People were simple, lives were simpler. We had fewer social media and more social interactions. We had more friends and no fans. Life has changed more than we could have ever imagined.

I was never the biggest helper in the kitchen, to be honest, my mom never asked me for help. We were encouraged to spend our time reading and studying. Still, I believe I picked many things from her just by watching. My mother always made fresh delicious treats at home unlike now when most of our snacks come from grocery stores.

The recipe of love

The first time I made grilled cheese after my marriage was at a breakfast for my in-laws. They were so impressed by this snack they couldn’t believe it could be made so quickly. Soon it was everyone favourite and was a regular at breakfast or snack table. Kids or adults, it suits all with slight variations.

As the years past and we grew up, it still remains a vital snack in my house. The amazing part is that it only takes a couple of minutes to make. You just put a cheese slice on bread and grill it till golden brown. It can be as simple as you want it to be and as extravagant as you please. Leftover chicken, olives or tomatoes, you name it and you can top it. This crispy scrumptious treat is ready in minutes.

Most people are obsessed with homemade sweet treats like cakes and brownies but very few people have quick homemade savoury specials. This doesn’t mean that I don’t fancy home-baked sweets, It simply means that I got some quick savoury snack to go with it.

Till the present day when I make an open grilled cheese for my kids, Its aroma sends me to the beautiful moments of my childhood and I relive the same joy and excitement but this time with my kids and not my mother. She left me 9 years back but I feel her love every day, in everything I do.
